Chilli Beef Noodles

Ingredients
400g beef rump steak
4tbsp sweet chilli sauce
5cm Ginger (peeled and finely grated)
3 garlic cloves, crushed
1½tbsp white wine vinegar
3tbsp light soy sauce
¾tbsp brown sugar
175g (6oz) baby sweetcorn, halved
200g (7oz) Tender stem broccoli, cut into shorter lengths
1tbsp olive oil
450g (1lb) cooked rice noodles
75g (3oz) baby spinach
Preheat oven to 200°c (180°c fan), gas mark 6
Cut the beef across the grain into 3/4cm strips and mix in a non metallic bowl with chilli sauce, ginger, garlic, vinegar, soy sauce and sugar. (If you can marinate for 24 hours)
In a large oven proof dish mix the sweetcorn, tender stem broccoli with olive oil and roast for 10 mins.
Add the beef and return to the oven for 10 mins
Carefully separate the noodles and add into dish. Return to oven for 5 mins to heat thoroughly.
Fold in the baby spinach and garnish with chilli, spring onions, and peanuts
